More Holiday 'Cookies'

Do you like the middle of the Oreo cookie???? This cookie recipe tastes just like it!

It's a little sticky to make...

But so worth it!

The recipe comes from the Country Living British Edition Magazine...super easy and very kid friendly!

Peppermint Melts:
2 egg whites-whip with a fork until frothy
1 lb of powdered sugar
a few drops of peppermint extract

After egg whites are frothy, mix in the powdered sugar a bit at a time. Add peppermint extract to taste. Once the batter is dough-like, knead on a surface covered with more powdered sugar until smooth. Roll out to 5/8th inch thickness. Use small circle cookie cutter until all dough is used. Lay flat on cookie sheet and let air dry. We put criss-cross designs on some to make them look like snowflakes. Cover with one more layer of sifted powdered sugar.
Store in an air tight container, layer with wax paper, for up to a month.

Enjoy!
